Clean Eating

Panko Crusted Tilapia

 Ingredients:
  • 4 tilapia fillets
  • Juice of two lemons
  • 1 cup panko bread crumbs
  • 1 Tbsp olive oil
  • salt
  • pepper
Directions: 
  1. Preheat oven to broil.
  2. Sprinkle both sides of fish lightly with salt and pepper, rub in.
  3. In a shallow dish soak fish fillets in lemon juice for 10 minute.
  4. Pour panko crumbs into another shallow dish.
  5. Coat both sides of fish with panko crumbs.
  6.  Heat oil in a cast iron skillet or other oven safe skillet.
  7. Cook tilapia in skillet for 6 minutes or until bottom is browned nicely, do not turn over: Transfer skillet to oven and broil tilapia until golden on top.
  8. Remove from oven and let cool for a few minutes before serving.
