Clean Eating - Breakfast

Day 2: Yesterday I made our favorite breakfast by far. It is a spin on an old favorite, a breakfast casserole. I found it in Tosca Reno's Eat Clean Cookbook. It is so good good. Here is the recipe. I hope you enjoy it as much as we do!

CLEAN EATING EGG STRATA



Number of Servings: 12

Ingredients


    10 slices sourdough bread
    1 package breakfast turkey sausage, cooked and drained
    9 egg whites
    3 whole eggs
    1 tsp Worchestershire sauce
    dash Tabasco sauce
    1 tsp poultry seasoning
    1 tsp dried mustard
    1 C shredded monterrey jack cheese
    1 small onion diced
    1 tsp garlic powder
    2 c nonfat milk


Directions

Spray lasagna pan with Pam. Preheat oven to 350.

Cook turkey sausage until no longer pink. Add poultry seasoning and 1 tsp garlic powder. Drain sausage in collander and set aside.

Mix egg, egg whites, ground mustard, worchestershire, Tabasco, and milk together.

Layer bread in the pan. Top with half the sausage, cheese, and onion. Layer bread on top, covering any holes, and then top with sausage, cheese, and onion. Slowly pour egg on top and allow to soak into the bread.

Cover and refrigerate overnight. (I did not do this, just baked it). Take out of the refrigerator, uncover and bake for one hour (Mine only took 45 minutes). Let sit for 10 minutes, cut and serve.
